I POSTED this picture on my Instagram last night and a few people wanted to know how it was made. I came across this recipe on my weight loss journey or rather at the time it was an attempt at weight loss and not a pure lifestyle shift. However it has stayed with me and an absolute favourite, quick and healthy go to meal.
Here is the recipe:
PORTIONS: 8-12
INGREDIENTS:
1 Onion – chopped
250g Bacon – finely chopped (I just buy the 250g pack of chopped bacon pieces)
8 Mushrooms – chopped (this is not cast on stone, when I buy uncut mushrooms I chop 12 sometimes depending on the size, or I buy the already chopped pack and use my discretion)
5 Eggs
250ml Fresh Cream (any brand will do)
To taste add Salt, Pepper and Garlic (I usually use a fresh garlic clove or garlic flakes)
250ml Cheese – grated (I always go for cheddar)
METHOD:
1. Preheat oven to 180°
2. Fry the first 3 ingredients together.
3. Add the eggs (they don’t have to be beaten, and you may want to remove the pan from the heat for this as you do not want your eggs to cook because you are still going to bake) and cream. Season to taste.
4. Pour into a greased backing dish or muffin tray (a cooking spray is the handiest and healthiest option)
5. Add the cheese on top
6. Bake for 30 minutes (set a timer, trust me there will be no need to peek).
